Carrot Cake Cupcakes:
- 1 ¼ cups (150g) all-purpose flour
- 1 tsp baking soda
- 1 ½ tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp nutmeg, freshly grated
- ½ tsp salt
- ½ cup (113g) unsalted butter, melted & cooled slightly
- ¼ cup (50g) neutral oil
- ½ cup (99g) granulated sugar
- ¼ cup (53g) light brown sugar, packed
- 2 large eggs, room temp
- 2 tsp vanilla extract
- 1 ½ cups (135g) grated carrots (3–4 medium carrots)
- 1/3 cup (50g) The Chai Box Candied Ginger
Orange Cream Cheese Frosting:
- 8 ounces (226g) full fat cream cheese, room temp
- ½ cup (113g) unsalted butter, room temp
- ¾ cup + 2 Tbsp (100g) confectioners’ sugar
- zest of 1 orange
- ½ tsp salt
Decoration:
- The Chai Box Candied Ginger or sprinkles
Instructions
Carrot Cake Cupcakes:
- Heat oven to 350°F. Line cupcake pan with paper liners.
- In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a large bowl, whisk together melted butter, oil, and sugars until thoroughly combined. Add eggs and vanilla, whisking to combine.
- Add half of flour mixture, mixing with a silicone spatula until almost combined. Add remaining flour mixture and mix until combined.
- Fold in grated carrots and candied ginger.
- Fill cupcake liners 2/3 full with batter.
- Bake for 20–25 minutes. Cupcakes are done when a wooden pick inserted in the centre comes out clean with only a few fluffy crumbs attached.
- Allow cupcakes to cool in pan for 10 minutes. Then transfer cupcakes to wire rack and allow to cool completely.
Orange Cream Cheese Frosting:
- Once the cupcakes are totally cool, make the frosting. In a medium bowl with a handheld mixer, beat together cream cheese and butter until smooth.
- Sift confectioners’ sugar into dairy mixture, then add orange zest and salt. Mix until combined, scraping down bowl as necessary.
Assembly & Decoration:
- Pipe or spread cream cheese frosting on cupcakes.
- Decorate with candied ginger or sprinkles and enjoy!
