Apple Doughnuts with Granola Butter Glaze

Apple Doughnuts:

  • 2 cups (240g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground cardamom
  • ½ tsp ground allspice
  • ¼ tsp salt
  • 2/3 cup (132g) granulated sugar
  • ¾ cup (170g) whole milk, room temp
  • 2 Tbsp (28g) unsalted butter, melted & cooled slightly
  • 1 large egg, room temp
  • 1 tsp vanilla extract
  • 1 cup (90g) grated apple [1]

Granola Butter Glaze:

Instructions

  1. Heat oven to 375°F. Grease wells of your doughnut pan(s); set aside.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, cardamom, allspice, and salt. Set aside.
  3. In a medium bowl, whisk together sugar, milk, melted butter, egg, and vanilla. Mix in grated apple.
  4. In the centre of the dry ingredients, make a well, then pour in liquid mixture. Mix just until combined.
  5. Pipe or spoon batter into pans, filling cavities ⅔ to ¾ full.
  6. Bake for 11–13 minutes or until edges are golden and doughnut springs back when lightly pressed.
  7. Allow doughnuts to cool for 5 minutes, then remove from pans and place on wire rack to cool completely.
  8. Once your doughnuts are totally cool, make the granola butter glaze. In a medium bowl, whisk together granola butter, confectioners’ sugar, and 2 Tbsp oat milk.
    NOTE: If you’d like your glaze to be thinner, add more milk. If you’d like it to be thicker, add more confectioners’ sugar.
  9. Dip tops of doughnuts into glaze or drizzle glaze over doughnuts. Top with sprinkles if you like!

Notes

  1. We used 1 Honeycrisp apple. Also, if your grated apple seems especially juicy, pile the shreds on a clean kitchen towel and gently squeeze to remove just a wee bit of juice.
  2. We used Sweetapolita Birthday Party and Fancy Sprinkles Wanderlust sprinkles on our doughnuts.
